Secret Pours
The wines we don’t put on the menu. Handpicked by Jeremiah, poured when you least expect it. Because some secrets are too good to keep—if you know to ask. This weeks secret pour...

Douloufakis Winery, Dafnes, Crete

High altitude vineyards produce razor sharp focused, mineral assyrtiko in a richer style than Santorini. Mid-yellow, citrus scented, lovely mellow aromas with citrus peel and nice lemony acidity. There is richness and velvety texture in abundance with an extra level of richness that will go really well with spicy food and Japanese sushi.

Type: Dry White
Varietal Composition: Assyrtiko 100%
Region: Dafnes, Crete, Greece
Vinification: Classic white vinification with fermentation in stainless steel tanks, at a low temperature. It was aged for 1 year in bottle.
